lime in the coconut.

it's official: if I eat anything else this weekend I'm going to explode. just had some froyo in attempt to cool off- now i just feel like ill. although i dont recommend consuming all the food i have- one really delic and easy treat were these coconut lime mussels.




put one can Goya coconut water (I like goyas because it has chunks of coconut in it), one tablespoon lime juice, and half a tablespoon of chili paste (or chili flakes) in a large pot. bring to a boil. add cleaned mussels, cover, and let cook for 4-6 minutes or until shells open.

high in protein and flavor- fill up on these suckers!
